Rui Liu, Doctor of Food Engineering, Postdoctoral of Agricultural Economic Management. He is now an assistant professor of Institute of Food and Nutrition Development, Ministry of Agriculture and Rural Affairs (MARA), China, Wheat Chief Analyst of Agricultural Products Market analysis and Early Warning Team, MARA. He is also the director of Cereal Industrial Technology Academy, Hebei Jinshahe Flour and Noodle Group (China), secretary-general of Green Agriculture and Food Nutrition Professional Committee, China Green Food Association, deputy secretary-general of China Cuisine Industrialization Professional Committee, World Association of Chinese Cuisine, Member of AACCI and ICC. His research focuses on wheat and flour quality evaluation, noodle and steamed bread processing technology, and wheat food industry and market study. He has published more than 40 papers and 3 books and authorized 7 Chinese patents as the first author. He leads several research projects supported by CAAS and MARA.
