Dr. Hsi-Mei Lai, obtained the B.S. degree from Dept. Agricultural Chemistry at National Taiwan University (NTU) and M.S. and Ph.D. degrees from University of Illinois at Champion-Urbana, USA. She has served at the faculty of NTU since 1998 and the full since 2006 in Dept. Agricultural Chemistry, NTU. She has been the Department head, Presidents of Taiwan Association of Agricultural Chemistry and Taiwan Neutron Science Society. She has published 45+ journal articles, is the author of 12+ book chapters and the editor of one book related to cereal chemistry and processing, starch chemistry and applications, as well as baking science and technology, food chemistry and analysis.
