Jennifer Dang has a Bachelor of Science degree in Food Science and Technology (UNSW) and completed a PhD in Agriculture (University of Sydney) in 2004, concentrating on rice chemistry. Jennifer is the Applications Manager at Perten Instruments of Australia (a PerkinElmer Company). Her main roles include managing applications projects and increasing the profile of Perten Instrument’s rheological instrumentation, and providing applications training and support to distributors and customers.
This presentation will introduce the Dough Extension System (DES), a texture analysis system to measure dough extensibility. Dough quality results from the DES will be compared to those from the traditional Extensograph. The presentation will show the suitability of the DES as a solution for bakers to measure dough extension properties and ensure quality and consistency in their products.
